For a light weekend, 300 to 600 Wh is enough (lighting, charging, small cooler). For several days for two with a compressor fridge, aim for 1000 to 1500 Wh, and 2000 Wh or more if you cook electrically. Solar significantly extends autonomy.
Yes. A compressor fridge draws roughly 40 to 60 W on average: a 1000 Wh station runs it for a good part of the day, longer with solar charging. Just make sure the output power exceeds the compressor's start-up surge.
